

Food on expeditions is always something to look forward to, not only due to the range of fresh and exotic ingredients, but for the simple reason that preparing a large meal at the end of the day is an enjoyable social event involving everyone onboard.
Seafood, that we have either caught ourselves or purchased from local people, forms the mainstay of most evening meals. Coral trout, mangrove jack, crayfish, squid and mud crabs are plentiful. Fresh local vegetables are cooked using traditional recipes involving coconut cream and sweet potato. Most dishes have an Asian influence and include chilli, ginger and fresh limes. For the more traditional at heart, there is always a sturdy serving of pasta available and vegetarians can easily be catered for.
Breakfast would not be complete without freshly percolated Highland coffee to go with fruit and toasted sandwiches. Lunches can be a combination of salads, rice dishes and sandwiches.
Imajica carries a wide range of condiments, and snacks are available throughout the day. Guests are invited to use the galley as they please and are welcome to bring favourite treats from home.
